While taking a workshop, I found this tip for organizing all of the apps we have. I have noticed that even now, I search the screens for a particular app I want to open. So, here are my instructor's steps for doing this: App Organization:
You can organize your Apps on your devices by placing them into Folders, and naming the Folders to reflect the app contents. You can do this on your device or in iTunes on your computer.
Creating Apps Folders:
You can create apps folders on your portable device by dragging one app icon on top of another.
You can also create folders for your apps right in iTunes.
Connect your device to the computer. In iTunes, select your device. In the main window, iTunes will display info about your device. At the top of the screen, click Apps.
Create a folder by clicking on an app, dragging it on top of another app that you want in the same folder, and dropping it there.
iTunes places the two apps in a folder and suggests a name for the folder based on the apps you have placed together. If you want to change the name, type the name you would like in the text box.
Managing your Apps Folders in iTunes:
-Add an app to an existing Folder:
Click the app you want to put inside the folder, drag it to the folder you want and drop it in place. A folder can hold up to 12 apps. Nested folders don't work - you can't put a folder inside another folder.
-Open a Folder:
Double click the folder you want to open
-Remove an app from an existing folder:
Open a folder, click the app you want to remove, and drag it outside the folder
-Move an app from one folder to another:
Open the folder, drag the app to its new folder and drop it there.
-Rename a folder:
Open the folder, click inside the text box to edit the folder's name. When you are finished click outside the text box or press enter.
-Rearrange the apps in a folder:
Open the folder and then drag and drop its apps icons into their new arrangement
-Delete an app that's inside a folder:
Open the folder and point at the app to select it. An X will appear in its upper-left corner. Click the X to delete the app.
-Close a folder:
Click anywhere outside an open folder to close it
-Delete a folder:
Open the folder and remove its apps
After you have made whatever changes you want to your apps and their folders, click the Apply button in the lower right part of the iTunes screen.
iTunes syncs with your device, applying the changes you have made in iTunes.
